If you like pineapple, you will like this cake. My husband really likes pineapple, so I am often on the lookout for recipes having pineapple as one of the main ingredients. Let me tell you, this recipe did not disappoint. It is a very dense, moist cake, having the same texture as carrot cake. It is rich and delicious. This recipe also does not contain any butter or oils but, it does have sugar…lots of sugar. The sugar is in equal amounts as the flour. But, if you look at it in the right perspective, sometimes you just have to splurge and give in to the dark side……………EAT THE SUGAR! The recipe makes a 9”x11” cake pan size but could very easily be cut in half to make an 8”x8”. Cross my heart….if you try this, you WILL eat the sugar. I did find, however, that the cake turned a nice golden brown after 35 minutes of baking but it was still not cooked through. I covered it with foil and baked it approximately another 5-8 minutes. Also, it says to frost the cake while it is still warm. After putting the frosting on the cake, in the beginning it was hard to spread the frosting because of the heat and the frosting just slid all over the cake. Be patient and it will eventually spread smoothly.
